Slow Cooker Recipes

Yo!

So one of my peeps reached out and asked me for some of my slow cooker recipes, so you all get them. Also why don't you tell me some of yours?

Here's one I love and used to make a lot but haven't made lately:


Posole - Faker Version

Chicken Posole
• 1 can (15 oz) white hominy, drained
• 1 can (14.5 oz) Mexican style diced tomatoes (I used stewed tomatoes)
• 1 can (10 oz) enchilada sauce (recipe calls for mild green, I used hot red)
• 2 carrots, diced
• 1 medium onion, chopped
• 3 garlic cloves, minced
• 2 tsp cumin
• 5 chicken thighs (boneless, skinless for me)
• Chopped cilantro
• Tortilla chips
1. Combine everything but cilantro and tortilla chips in the crock pot. Cook for 3 - 3 1/2 hours on high.
2. Shred the meat up a little bit, throw the cilantro in, give it a stir and serve it with some tortilla chips on the side. YUM!

Slow Cooker Korean Beef Tacos


Ingredients
3-4 pounds beef roast (I used a chuck roast)
1/2 cup brown sugar
1/3 cup soy sauce
1 head garlic (peeled, but leave cloves intact--approx 10 cloves. I smashed them.)
1/2 onion, diced
1 inch fresh ginger root, peeled and grated
2 tablespoons rice wine vinegar
1 tablespoon sesame oil
1 whole jalapeno, diced (be careful! use gloves!)


The Directions.

Use a 6-quart slow cooker. No need to brown the meat, but do trim off the visible fat. Put roast in slow cooker. Mix all ingredients into a bowl then pour over meat.

Cover, and cook on low for 8-10 hours or until meat has fully shredded--- you can help it out by cutting the meat into pieces an hour or so before serving time. Serve in soft corn tortillas with shredded cabbage salad.

Shredded cabbage:

1 bag shredded coleslaw from the grocery store's produce section
1 tablespoon soy sauce
2 tablespoons rice vinegar
salt and pepper to taste
toss together and serve immediately

What I make most often now doesn't really have a recipe, but it's my slow cooker lentil soup. Here's how it goes:
  • Lentils - I use the trader joe ones because they are easy and you don't have to clean them. 
  • onion or garlic or both - chop them up small
  • carrots and celery - chop them up
  • chicken or vegetable broth - about 4-6 cups
  • small can of tomato sauce
  • optional ingredients:
    • Parmesan rind
    • chopped ham or prosciutto
    • potatoes
    • sweet potatoes
    • butternut squash
    • any vegetable you have lying around the kitchen 
  • At the end, you can stir in spinach
  • eat with crusty bread, top with parmesan
This is a weekly staple in my house and the kids always love it.
