cuties II

my best friend

We went down to San Diego to see my niece perform on Sunday. She was in a strange musical about brain eating zombies. The kids these days. But the song she sang was Once Upon a Dream from Sleeping Beauty. When Nav was a baby, I used to sing her that song and dance her around to get her to sleep in Sunny's little kitchen in Long Island.

Misc. Updates

  • Did I tell you at my boss's wedding I made two new friends that I love? Anyways, one of the guys was named Blaine! You heard me. Blaine! So I said, "Blaine! That's not a name that's a major appliance!" Haha, I'm so funny. And I said how often do people say that do you when they meet you? And he said about every 6 weeks. Welp. There you go. Equally exciting as his name is that he is very good friends with one of my favorite people who lives in NYC. So. Crazy. I found out because I added him on The Facebook before we parted for the evening and saw that we had a mutual friend. So we freaked out and sent good old PeepMadden a picture of us together. See? Facebook. It's good for some things.
  • A car crash occurred right in front of my house yesterday. As in, I was sitting on the couch holding a sleeping Joze (awww) and Buddy was watching shows when I saw an SUV run right into a parked car and a moving car. Dang! Babe went out there, cuz he's a dad and that is what dad's do. Am I right, people? Anyways, the lady got out of her car and turns out she was totally on drugs. She gave her information to the people who she ran into and the guy across the street who owns the parked car and then she said, "I gotta go." And Babe was like, um, lady, look at your car, you're not going anywhere. (Cuz the front wheel was tipped over at an angle.) And she got into her car and drove off, with sparks flying off the car the whole way. Crazy! Well, sure enough a few minutes later her husband comes back, says his wife was effed up on drugs from the hospital (mmmhmmmm) and he wants to just pay everyone for their trouble. At that point, Babe came back inside.
  • I'm not sure if I told you, but Jozie laughs now and she also found her feet. I seem to remember 4 months being when they really become like little Gerber babies and she does not disappoint. I don't have any pics but I will snap some tonight.
  • Work has been good so far, mainly getting organized and reminding myself what my job is. I have my first event tonight so that will be the first time I haven't raced home to be able to nurse Josie at 5pm. We'll both be just fine.
  • How are you guys? I feel like all I do is talk about myself.

My summer vacation

Our summer vacation this year was to Portland! We visited the Long Beach crew, who no longer live in long beach.

Joze took her first flight.

And stared at her dada.

We went to sooo many breweries.

And practiced duckface.

we hiked in the woods.

and played on the porch.

There were a lot of children.

These two girls were BFF for a few days.

I took a lot of pictures of this baby. Who was two months old!

we played in the shadow of mt hood.

and drew spiders in the sand.

and floated in the lake.

and generally just ran around.

Even played cornhole.

Look at the baby! Look at the baby!

and played in rad parks on the banks of the river.

Go bears!

There were many waterfalls.

The kids were so fun.

And then we flew home!

Recipe: Cold Noodle Salad with Creamy Peanut Sauce

It's been so freaking hot this past week, like even hotter than it was this summer, that cooking just plain sucks.

I made this salad to go with some other items on Sunday night and it lasted for lunch for three people. I got the recipe mainly from here, and here are my changes.

Cold Noodle Salad with Creamy Peanut Sauce

Serves 4

6 cups low-sodium beef, chicken, or vegetable stock (See Recipe Note) - I FORGOT TO USE CHICKEN BROTH AND JUST USED REGULAR WATER
1 tablespoon kosher salt
12 ounces Chinese wheat noodles or other flat-style noodles - I USED SPAGHETTI NOODLES, LIKE REGULAR ONES.
1/2 cup creamy peanut butter
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
Red pepper flakes, to taste (optional)
1-2 bell peppers, cut into thin slices, divided (See Recipe Note)
1/2 cup roughly chopped peanuts, divided
Cilantro leaves and lime wedges for garnish - I DIDNT HAVE THESE THINGS

In a large pot, bring the stock and salt to a boil. Add the noodles and cook until al dente, 3 to 4 minutes. Reserve two cups of the cooking broth before straining. Run the noodles under cold water and shake to remove excess liquid before returning them to the empty pot. OR YOU KNOW, JUST BOIL WATER AND ADD SPAGHETTI

In another bowl, combine the peanut butter, soy sauce, vinegar, sesame oil, and 1/4 cup hot cooking broth and whisk vigorously until mixed. (It will be quite thick.) Toss the peanut sauce with the noodles until coated. Stir in additionalhot cooking broth — a few splashes at a time — until the dish is smooth and creamy. (You will probably not need all of the reserved broth.) Taste and season with red pepper, additional soy sauce, and rice vinegar if desired. OH. OKAY SO I DIDNT REALLY DO THIS. I PUT EVERYTHING IN THE BLENDER. WHATEVER.

Fold in 2/3 of the bell peppers and 1/4 cup peanuts. Transfer noodles to serving dish and garnish with remaining peppers and peanuts. Garnish with cilantro leaves and lime wedges. This can be served warm, cold, or at room temperature. FOLDING. HA.
