Meatless Monday?

It seems like every Monday we have my favorite dish, so I'm sharing the recipe with you. It's less of a recipe and more of a method, so hang with me. If you try it, I promise you'll like it.

Pasta with whatever you have in the fridge plus some pantry items

  • Start a huge pot of boiling water. As it boils assemble your ingrediants. Here are some things you'll need; you should have most of them already. 
  • Garlic or onion.
  • Any type of greens (spinach, arugula, even Kale unless you're Joseph)
  • Tomatos, any amount and any type, even canned
  • Olives or pepperocini
  • Any bacon? Ham? Sausage? - I usually go meatless, but whatever. It's up to you. 
  • Lemon or lime or chicken broth 
  • Red chili pepper flakes
  • Parmesan
Now that you've assembled any of the above, you can get started on the cooking.
  • Chop up some garlic or onion. I prefer garlic. 
  • Chop your tomatoes (or open a can), then drain them and salt them and set them aside. 
  • Heat a large frying pan with olive oil. 
  • Add your garlic and some red chili flakes
  • Heat up the sausage or ham (or don't)
  • Add your tomatoes and stir
  • Add your greens (or don't)
  • Add some lemon or lime or chicken broth, just enough to add flavor and wilt the greens. 
  • Add your olives or pepperocini. (or both)
  • At this point, you pasta should be done. Drain it and add it to your pan. Mix it up and eat it with some parm. It's my favorite!
